Easy Everyday Oats
Note – we’re using rolled oats here, not the quick cooking kind.  This is just a quick way to prepare them.

This oats recipe is one my husband Mike and I concocted almost 3 years ago and have enjoyed almost every single day since!  Here’s what we do:

Put water on to boil (enough for lemon water and maybe 3/4 cup for the oats)
In cereal bowl, combine:

1/2 cup oats
Dash of cinnamon
5-6 walnuts broken up as you drop them in
As many of the following seeds as you can manage (1 Tbsp of each would be a great goal):
sesame, sunflower, pumpkin, flax, chia, hemp
Pour hot water over the oats and seeds.   Let sit for a few minutes, stir, then add –
As much fruit as you want to make it nice and sweet and yummy:
blueberries, strawberries, raspberries, banana

A recent trick I learned from my aunt and cousin – stir in a Tbsp of peanut butter for a nice creamy texture and a slightly different taste.

Cold Oatmeal
When I’m in a pinch, my old cereal habit works like a charm – but there’s a big difference between my old Lucky Charms and my new cold cereal!  This recipe avoids the blood sugar highs and lows that come with cereals that are made from flours instead of whole grains.

Put 1/2 cup rolled oats in a bowl
Mix in 1/2 cup of your favorite whole grain cereal – I love Ezekiel Cinnamon Raisin, or Kashi 7 Whole Grain Puffs.
Add soy or almond milk
Top with fresh or dried fruit  and you’re good to go

Steel Cut Oatmeal
These take a little time investment, but it’s a great way to mix it up on the weekends.

Bring 1 1/2 cups water to a boil
Add 1/3 cup steel cut oats
Simmer 25-30 minutes stirring occasionally
Transfer to a cereal bowl and add a splash of almond or soy milk
Add a pinch of brown sugar or a teaspoon of maple syrup if desired
Top with fresh fruit – blueberries, raspberries, blackberries, peaches
Add raisins, craisins, and/or dried cherries
Sit down and enjoy!

Pancakes From Scratch

1c Organic rolled oats

1c Bob’s Red Mill whole grain pancake mix
1/4 tsp Baking powder
2 Tbsp chia seeds
2 Tbsp hemp seeds
2 Tbsp ground flax seeds
1/2 banana
2-3 cups unsweetened plant milk – soy, almond, rice, hemp, whatever

Toss all dry ingredients into a high speed blender or food processor.  Grind the oats down so they’re more like a rough flour.  Add the banana and 1 1/2 cups milk.  Blend again on low.  Continue adding milk until you achieve desired consistency.  These should end up thicker than instant pancake mixes, almost like a soft biscuit dough. Drop in raw walnuts or pecans for a nutty twist.  Cook in a non-stick griddle as usual!  Feel free to stir in blueberries, strawberries, or raspberries as you wish!  I spread with apple butter to avoid using maple syrup.
