Homemade Guilt Free Waffles

Looking for a way to impress that special lady in your life for Mother’s Day?   Try this simple 5 minute recipe for breakfast in bed and she’ll think you slaved all night!  

2 ripe bananas 

2 cups gluten free oats

1/2 cup oat milk (soy and almond work great too)

1 tsp cinnamon

1/2 tsp vanilla (sugar-free alcohol-free if possible)

1 1/2 cup fresh fruit, chopped.  Raspberries, mango, strawberries, and blueberries make for a delightful treat but most fruit will work great.  

Yields 4 classic waffles.  

 Preheat waffle iron.  With a fork, smash the ripe banana until it is soft and squishy like pudding.  Stir in oats, cinnamon, and vanilla.  

Spoon batter onto hot waffle iron, filling all the books and crannies.  The batter will be much less runny than typical pancake batter but that’s ok, trust me.  

Heat for about 5 minutes, turning over the iron half way through if possible.  

Use a rubber spatula to peel the waffles off the iron.  

Top with fresh fruit and a light sprinkle of cinnamon.   Enjoy!
